Introduction

We spent three packed days at FI Europe 2025 in Paris, meeting brilliant people, discovering new ideas and tasting more samples than we care to admit. Between insightful panels, future ready ingredient trends and inspiring conversations around safety, sustainability and tech, the expo delivered plenty to think about. Here are our highlights and key takeaways from this year’s expo.

A Global Expo Fueled by Innovation and Collaboration

Fi Europe 2025 brought the global food industry together once again in Paris, offering a vibrant stage for innovation, future ready ingredient solutions and meaningful conversations about safety, sustainability and emerging technologies. As one of the world’s leading expos for food ingredients, Fi Europe is designed to spark collaboration, inspire product development and highlight the systems that help teams bring safer, smarter products to market. For us at foodflou, the event delivered everything we hoped for and more.

From the first morning to the final closing moments, the expo was full of energy. We met familiar faces, connected with new partners and explored an impressive mix of tastings, research driven sessions and discussions around quality assurance. It was clear how much the industry is shifting towards more transparent supply chains, stronger compliance foundations and tech enabled efficiency that helps teams work with clarity and confidence.

Day One. Energy, Connection and a Focus on Food Safety

The first day set the tone with meaningful discussions around food safety and the need for tools that simplify complex compliance work. Many teams that we chatted with shared the same desire to reduce admin time and create clarity in quality processes, something we are deeply committed to improving at foodflou. We left day one excited for the next sessions, including the Women’s Networking Breakfast that celebrated leadership and empowerment within the industry.

Day Two. Responsible AI, Global Perspectives and Unexpected Flavors

The second day was packed with learning and plenty of fun. One of the standout sessions was Responsible AI, How the industry can accelerate innovation, featuring perspectives from thought leaders pushing the boundaries of how AI can support R&D, quality, forecasting and regulatory readiness. It was refreshing to hear such a forward looking conversation in a space that is actively transforming how products are developed and assessed.

A meaningful moment of the day was our discussion with Maura Di Martino from FAO. Together we explored global food safety challenges and the importance of data driven systems that help organisations respond with confidence.

Of course, Fi Europe is not only about ideas, it is also about taste. Day two delivered some unforgettable discoveries that included protein chocolate popcorn that was dangerously snackable and banana bread flavored milk that surprised us all. We even found ourselves sampling vodka soaked jellies with friends from Gelatin Brodnica, a moment that will definitely stay with us. These small discoveries offered a fun reminder of how creative ingredient innovation can be.

Day Three. Irish Innovation, Tech Forward Thinking and the Future of Functional Ingredients

The final day kept the energy high. We spent time exploring the Irish stands and could not help feeling proud. So many Irish companies were showcasing smart, sustainable and genuinely exciting ingredient innovations. As an Irish team, it was great to see our local industry making such a strong impact on an international stage. We also had a lovely catch up with Bord Bia, which made the moment feel even more special and highlighted just how far Ireland has come in global food innovation.

We also had an insightful conversation with Mario Ubiali from Thimus, discussing the role of new technology in shaping decision making, operational efficiency and product strategy. To close the event, we joined the session Food and Mood, Looking at the Gut Brain Axis for Multifunctional Ingredients. As interest in functional foods continues to surge, this topic felt especially relevant. Understanding how ingredients influence mood, cognitive function and overall wellbeing through the microbiome is opening new pathways for innovation and redefining what consumers expect from their food.

Leaving Paris Inspired, Educated and a Little Too Full

After three days of rapid fire conversations, scientific insights and more samples than any human should reasonably consume, we left Paris energised by the direction the industry is taking. Fi Europe remains a hub for forward thinking ingredient development and a powerful reminder of how collaboration shapes progress.
